Tuesday Thoughts

Hey friends!

Well, I had my first day of college classes yesterday! Second year dual enrolling and I love it! This semester I am taking College Algebra and Spanish in Healthcare. I like both of my professors!

The other day I felt inspired and decided to make a recipe off of my Pinterest board! (By the way, have I talked about how much I love Pinterest?!)

Nutella cookies with only 4 ingredients- 1 cup nutella, 1/2 cup sugar, 1 cup flour, 1 whole egg.

So I made these yummy and super easy cookies! Check out the recipe here. I also made yummy biscuits for breakfast- and when I realized we didn't have any buttermilk, I decided to make my own! I mixed some Greek yogurt with milk- and tah dah! They tasted great! I was glad that it didn't turn out to be a fail :)

So excited- we have a 3rd car! Meet the newest member of the fam! (we are deciding on a name...)

Coming soon... Senior photo shoot sneak peeks! :)

Here is a picture (PC: Allie!) of me taking Rachel's pictures! :)

Breakfast at Fido with my Theophili girls! So weird- last year we were sending off Megan to college! Now all four of them are going! So blessed and thankful for these girls!

Speaking of Pinterest, here are some things that make me laugh. Check out my Pinterest here.

Well played, Google. this is amazing- do it!

Haha. Totally just read this out loud in Kip's voice (;
haha yessss

Some quotes for the day:

“I fall in love with people’s passion. The way their eyes light up when they talk about the thing they love and the way they fill with light.”

One of my favorite verses.
“Stay in the Word. The moment you start letting go of that, you’re on the road to compromise. Stay grounded, remain pure, keep your eyes fixed on Jesus.”
—Adam Young of Owl City

Verse of the day: Deut. 31:6: "Be strong and courageous. Do not fear or be in dread of them, for it is the LORD your God who goes with you. He will not leave you or forsake you."

Be blessed today!

Yay!! It made me happy :o)

Makos won the meet on Wednesday!! It was also fun- we won the big event- the tshirt relays!

Last night was the school swing dance! "HEY!! Look!! A bird!" haha!

A really yummy fall recipe:

Pilgrim Pies

If you think good old whoopie pies just can't be improved upon, just wait until you try these: pumpkin cookies filled with fluffy cream cheese frosting. They're guaranteed to be a popular new addition to your standard Thanksgiving dessert offerings.
Ingredients
  • PUMPKIN COOKIES
  • 2 eggs
  • 2 cups light brown sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 (15-ounce) can pumpkin
  • 3 cups flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • FILLING/CREAM CHEESE FROSTING
  • 4 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 2 teaspoons vanilla extract
  • 4 to 5 cups confectioners' sugar
Instructions
  1. Heat the oven to 350 degrees. Beat the eggs, brown sugar, oil, and vanilla extract in a mixing bowl until smooth. Stir in the pumpkin. In a separate bowl, combine the flour, pumpkin spice, baking powder, baking soda, and salt. Add the dry ingredients to the egg mixture a half cup at a time, blending each time until smooth.
  2. Drop a heaping tablespoon of batter onto an ungreased cookie sheet, using a moist finger or the back of a spoon to slightly flatten each mound. Bake the cookies for 12 minutes, then transfer them to a wire rack to cool completely.
  3. Meanwhile, make the frosting. Beat together the cream cheese, butter, and vanilla extract in a bowl until light and fluffy. Mix in the confectioners' sugar a half cup at a time, until the frosting is spreadable.
  4. To assemble the pies, turn half of the cookies bottom side up and spread a generous amount of cream cheese frosting on each one. Top them with the remaining cookies (turned right side up). Makes 10 to 14 Pilgrim Pies.

Question of the day: Why is it when people with accents (i.e. British) sing, why can't you hear their accents?! I have always wondered that. Just sayin.

Verse of the day:
2 Chronicles 7:19 If my people, which are called by my name, shall humble themselves, and pray, and seek my face, and turn from their wicked ways; then will I hear from heaven, and will forgive their sin, and will heal their land.

Happy Friday! Stay warm!

happenings

Hey friends!

Sorry that I have not blogged much this week!

Let's see! What all has happened since I last blogged? Just a warning- this is going to be long.... ~;-)

This morning I went out to breakfast with Hannah at the Pancake Pantry and then we went shopping in that area! YUM our breakfast was very tasty! Hannah got the french toast and I had the Georgia Peach Pancakes. :o) yummmmm! We had lots of fun!! Love you, sweetie!!

This afternoon I had lunch with Grace and Jenny at Panera! Then we did lots of fun shopping! :D New York and Company, I do believe, is my new favorite store. :o) They had super cute and big "obnoxious" sunglasses like I wanted for $5 each! Score! And adorable flip flops for $5! Love that place! I so enjoyed hanging out with Jenny and Grace! Love you girls!!

And tonight a cute couple from our church is coming for dinner and they are going to teach us how to grill! yeahhh!

We are also very excited about Aunt Susan, Sophia, and Hannah coming to visit us today! Aunt Susan called yesterday to see if we were doing anything this weekend (which we aren't doing a lot) so she and the girls are driving up! So fun!! It will be so good to see them!

Yesterday Cara and I babysat Marley and Maguire! they are so sweet!

On Tuesday night Julia and I made dinner! We made fettuccine alfredo with chicken and it was AMAZING. If I say so myself haha. :o) It is supposedly Olive Garden's recipe but we added a bunch of stuff. Here is our recipe!

Sauce:
4 ounces cream cheese- cut in bits (the recipe said to do 8 ounces but everyone who commented said to do 4 instead)
3/4 cup butter
1/2 cup milk
1/2 cup half and half or heavy whipping cream (we used the latter)
3/4 cup Parmesan (which we did not have so see the cheese below)
4 slices baby swiss
3 slices provolone
1/4 cup mexican cheese
Garlic, salt, and pepper to taste
{The recipe suggests 8 ounces of cooked and drained fettuccine but we just used regular spaghetti noodles)

In a large saucepan combine cream cheese, cheese, butter, milk, and heavy whipping cream (or half and half), stirring constantly until smooth. Toss pasta lightly with sauce, coating well.

For chicken:
We used 2 cups of Costco's pre-cut and pre-grilled chicken. (it is awesome!!)
Handful of freshly cut basil (from the garden!)
Heat chicken with tablespoon of butter then combine with basil, top on pasta.

We also sprinkled the parmesan that comes in a green container (for spaghetti) and some fresh cilantro on top.

Enjoy!

love,

Lily :o)
